  • 3 cups (720 ml) finely chopped curly parsley, about 2 bunches
  • 1 cup (240 ml) diced English cucumber
  • 1 cup (240 ml) cored and diced tomato
  • 2/3 cup (160 ml) cooked bulgur wheat*
  • 1/3 cup (80 ml) finely chopped fresh mint
  • 2 scallions, chopped


Instructions

  1. In a spacious bowl, blend the vegetable oil, lemon juice, grated garlic, sea salt, ground coriander, and a dash of cinnamon using a whisk.
  2. Incorporate the finely chopped parsley, diced cucumber, diced tomato, cooked bulgur wheat, chopped mint, and scallions, then mix everything thoroughly together.
