Description

A delightful cake made with fresh strawberries and softened butter, perfect for any occasion.


Ingredients

  • 1 stick unsalted butter (softened)
  • 1 1/4 cups granulated sugar (divided)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 16 ounces fresh strawberries (sliced)


Instructions

  1. Preheat your oven to 350°F and spray a 9-inch round cake pan with cooking spray.
  2. In a stand mixer, whip together the softened butter and 1 cup of granulated sugar until pale and fluffy (about 5-7 minutes).
  3. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  4. In a medium bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the flour mixture to the butter mixture, alternating with the sour cream, starting and ending with flour, beating just until combined.
  6. Gently fold in the sliced strawberries.
  7. Spread the batter evenly in the prepared cake pan and sprinkle the remaining 1/4 cup of sugar on top.
  8. Bake in the preheated oven for 35-40 minutes, or until a wooden pick comes out clean.
  9. Allow the cake to cool completely in the pan before slicing and serving.

Notes

Use room-temperature ingredients for better emulsification. Consider dusting with powdered sugar or serving with whipped cream.
