A delightful cake made with fresh strawberries and softened butter, perfect for any occasion.
Ingredients
- 1 stick unsalted butter (softened)
- 1 1/4 cups granulated sugar (divided)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 16 ounces fresh strawberries (sliced)
Instructions
- Preheat your oven to 350°F and spray a 9-inch round cake pan with cooking spray.
- In a stand mixer, whip together the softened butter and 1 cup of granulated sugar until pale and fluffy (about 5-7 minutes).
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Gradually add the flour mixture to the butter mixture, alternating with the sour cream, starting and ending with flour, beating just until combined.
- Gently fold in the sliced strawberries.
- Spread the batter evenly in the prepared cake pan and sprinkle the remaining 1/4 cup of sugar on top.
- Bake in the preheated oven for 35-40 minutes, or until a wooden pick comes out clean.
- Allow the cake to cool completely in the pan before slicing and serving.
Notes
Use room-temperature ingredients for better emulsification. Consider dusting with powdered sugar or serving with whipped cream.
