Ingredients

  • 3 tablespoon (45 ml) s butter
  • 5-6 large onions, thinly sliced
  • 1 teaspoon (5 ml) fresh thyme
  • A pinch each of salt and pepper
  • 4 boneless, skinless chicken breasts, butterflied
  • 1 cup (240 ml) shredded mozzarella or gruyere cheese (or a mix of both!)
  • 1/4 cup (60 ml) freshly grated parmesan cheese
  • 2 tablespoon (30 ml) s olive oil
  • 1/3 cup (80 ml) chicken or beef stock
  • A few sprigs of fresh thyme


Instructions

  1. Warm a large cast iron pan over moderate heat and melt the butter in it.
  2. Once the butter is melted, introduce the thinly sliced onions and let them cook until they become caramelized, stirring frequently as they develop color. Add the fresh thyme, along with a pinch of salt and pepper, stirring to blend the flavors.
  3. When the onions reach a deep golden hue, transfer them to a separate bowl and switch off the heat under the skillet.
  4. Mix the mozzarella, gruyere, and parmesan cheeses together in a bowl. Fill each butterflied chicken breast with this cheese mixture and a few spoonfuls of the caramelized onions, securing them with toothpicks. There should be about half a cup or more of the caramelized onions left.
  5. Reheat the skillet to medium-high and, once hot, pour in the olive oil followed by the chicken breasts.
  6. Carefully sear the chicken breasts on all sides, ensuring the stuffing stays in place.
  7. Once browned but not fully cooked, move the chicken to a plate and turn off the heat. Put the remaining caramelized onions back into the skillet, along with the chicken stock.
  8. Place the chicken breasts back into the onion and stock mixture in the skillet, and add a few sprigs of fresh thyme.
  9. Bake in an oven preheated to 350 degrees Fahrenheit for approximately 20 minutes, or until the chicken is fully cooked with an internal temperature reaching 165 degrees Fahrenheit (75 Celsius).
  10. After cooking, allow the chicken to rest for a few minutes, then remove the toothpicks and serve each piece with a helping of onions and the flavorful juices from the pan.
