Ingredients

  • 1/2 cup (113 g) unsalted butter
  • 2 tablespoons (30 ml) olive oil
  • 4 cups (960 ml) sliced onions
  • 5 cups (1.2 L) beef broth
  • 2 tablespoons (30 ml) beef broth
  • 1 teaspoon (5 ml) dried thyme
  • 1 pinch salt and pepper to taste
  • 4 slices French bread
  • 4 slices provolone cheese
  • 2 slices beef cheese, diced
  • 1/4 cup (25 g) grated Parmesan cheese


Instructions

  1. Collect all necessary components.
  2. In a large pot, combine the butter and olive oil over medium heat. Stir in the onions, ensuring they are constantly mixed until they become soft and see-through, being careful not to let them brown.
  3. Introduce the beef broth and thyme into the pot. Season the mixture with salt and pepper. Allow it to gently cook for half an hour. During this time, set the oven to broil.
  4. Pour the soup into heat-resistant bowls and place a piece of bread atop each serving (feel free to break the bread into smaller pieces if desired). Top each with a slice of provolone, half a slice of diced beef cheese, and a tablespoon of Parmesan cheese.
