Ingredients
- 2 pounds ground beef (or turkey)
- 2 large onions, thinly sliced
- 1 cup breadcrumbs (or gluten-free alternative)
- ½ cup shredded cheese (Swiss or Gruyere)
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- Salt and pepper to taste
- Optional: Onion soup mix for additional flavor
Instructions
- Begin by caramelizing the sliced onions. Heat olive oil in a skillet over medium heat. Add the onions and a pinch of salt, stirring occasionally for 20-25 minutes until they turn golden brown.
- Allow the caramelized onions to cool slightly. In a bowl, combine the ground beef, breadcrumbs, shredded cheese, egg, garlic powder, thyme, salt, and pepper. Mix gently until fully combined.
- Fold in the cooled onions, ensuring they are evenly distributed throughout the meat mixture.
- Shape the mixture into a loaf on a lined baking sheet or place it in a loaf pan.
- Preheat your oven to 375°F (190°C). Bake the meatloaf for 50-60 minutes or until it reaches an internal temperature of 160°F (71°C).
- Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.
