Description

A comforting and flavorful meatloaf made with ground beef, caramelized onions, and melted cheese, perfect for family dinners.

Ingredients

  • 2 pounds ground beef (or turkey)
  • 2 large onions, thinly sliced
  • 1 cup breadcrumbs (or gluten-free alternative)
  • ½ cup shredded cheese (Swiss or Gruyere)
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Optional: Onion soup mix for additional flavor

Instructions

  1. Begin by caramelizing the sliced onions. Heat olive oil in a skillet over medium heat. Add the onions and a pinch of salt, stirring occasionally for 20-25 minutes until they turn golden brown.
  2. Allow the caramelized onions to cool slightly. In a bowl, combine the ground beef, breadcrumbs, shredded cheese, egg, garlic powder, thyme, salt, and pepper. Mix gently until fully combined.
  3. Fold in the cooled onions, ensuring they are evenly distributed throughout the meat mixture.
  4. Shape the mixture into a loaf on a lined baking sheet or place it in a loaf pan.
  5. Preheat your oven to 375°F (190°C). Bake the meatloaf for 50-60 minutes or until it reaches an internal temperature of 160°F (71°C).
  6. Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.

Notes

Use a meat thermometer to ensure the meatloaf is cooked through without overcooking. Allow resting to keep the meat juicy.
