Description

A comforting and flavorful soup featuring tender beef short ribs, caramelized onions, and bubbly Gruyère cheese, perfect for family gatherings.


Ingredients

  • 2 lbs beef short ribs
  • 3 large yellow onions, thinly sliced
  • 6 cups beef broth
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • 4 slices sourdough bread
  • 1 cup Gruyère cheese, shredded
  • 2 tbsp unsalted butter
  • Salt and pepper to taste


Instructions

  1. Melt butter in a large pot over medium heat, then add onions and cook for about 30 minutes until golden brown.
  2. Push the onions aside and sear the beef short ribs for 5-7 minutes until crusted.
  3. Pour in the beef broth and add thyme and bay leaves; bring to a gentle boil.
  4. Reduce heat and simmer uncovered for about 120 minutes.
  5. Preheat oven to 350°F (175°C).
  6. Ladle soup into oven-safe bowls, place a slice of sourdough bread on top, and sprinkle with Gruyère cheese.
  7. Bake for 15-20 minutes until cheese is bubbly and golden.

Serve with fresh thyme garnish and enjoy with a side of mixed greens or additional sourdough bread.
