Delicious and fluffy pancakes made with mashed sweet potatoes, perfect for breakfast or brunch.
Ingredients
- 1 cup mashed sweet potatoes
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk (or non-dairy alternative)
- 1 large egg
- 2 tablespoons melted butter (or coconut oil)
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine the mashed sweet potatoes, milk, egg, melted butter, and vanilla extract. Mix well until all ingredients combine smoothly.
- In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Pour the dry ingredients into the wet ingredients and stir until just combined. Avoid over-mixing; a few lumps are perfectly fine.
- Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter for each pancake into the skillet.
- Cook until bubbles form on the surface, then flip the pancakes and cook until golden brown.
- Serve warm with your favorite toppings.
Notes
For a gluten-free variation, substitute all-purpose flour with a gluten-free blend. You can also experiment with different milk types for taste.
