Description

Delicious and fluffy pancakes made with mashed sweet potatoes, perfect for breakfast or brunch.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk (or non-dairy alternative)
  • 1 large egg
  • 2 tablespoons melted butter (or coconut oil)
  • 1 teaspoon vanilla extract


Instructions

  1. In a large bowl, combine the mashed sweet potatoes, milk, egg, melted butter, and vanilla extract. Mix well until all ingredients combine smoothly.
  2. In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Pour the dry ingredients into the wet ingredients and stir until just combined. Avoid over-mixing; a few lumps are perfectly fine.
  4. Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter for each pancake into the skillet.
  5. Cook until bubbles form on the surface, then flip the pancakes and cook until golden brown.
  6. Serve warm with your favorite toppings.

Notes

For a gluten-free variation, substitute all-purpose flour with a gluten-free blend. You can also experiment with different milk types for taste.
