Description

Delightful fluffy pancakes that bring family together around the breakfast table.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter or oil


Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, combine milk, egg, and melted butter or oil.
  3. Pour the wet mixture into the dry ingredients. Stir gently just until combined, leaving some lumps.
  4. Allow the batter to rest for about 5 minutes while preheating the skillet.
  5. Grease the skillet lightly, then pour 1/4 cup of batter for each pancake onto the hot surface.
  6. Cook until bubbles form on the surface and the edges begin to look set, about 2-3 minutes.
  7. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.

Notes

For extra fluffiness, separate the egg and beat the egg whites until stiff peaks form, then fold them into the batter gently.
