Ingredients

  • 1 ripe banana, mashed
  • ½ cup cottage cheese
  • 2 large eggs
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • ¼ teaspoon cinnamon (optional)
  • Pinch of salt
  • Butter or oil for greasing


Instructions

  1. Combine mashed banana, cottage cheese, eggs, rolled oats, baking powder, optional cinnamon, and a pinch of salt in a blender. Blend until smooth, taking about 30 seconds.
  2. Let the batter rest for 5 minutes to thicken.
  3. Heat your non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  4. Pour ¼ cup of batter for each pancake onto the hot surface.
  5. Cook until bubbles form on the surface, around 2-3 minutes.
  6. Flip the pancakes carefully and cook until they turn golden brown, which takes about 1-2 minutes more.
  7. Serve warm, garnished with fresh banana slices and a drizzle of maple syrup.

Notes
