Ingredients
- 1 ripe banana, mashed
- ½ cup cottage cheese
- 2 large eggs
- ½ cup rolled oats
- ½ teaspoon baking powder
- ¼ teaspoon cinnamon (optional)
- Pinch of salt
- Butter or oil for greasing
Instructions
- Combine mashed banana, cottage cheese, eggs, rolled oats, baking powder, optional cinnamon, and a pinch of salt in a blender. Blend until smooth, taking about 30 seconds.
- Let the batter rest for 5 minutes to thicken.
- Heat your non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
- Pour ¼ cup of batter for each pancake onto the hot surface.
- Cook until bubbles form on the surface, around 2-3 minutes.
- Flip the pancakes carefully and cook until they turn golden brown, which takes about 1-2 minutes more.
- Serve warm, garnished with fresh banana slices and a drizzle of maple syrup.
Notes
Ensure bananas are very ripe for best flavor. Don’t over-blend the batter; a few small lumps are fine.
