Ingredients
- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup oats (gluten-free if needed)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- In a blender, combine the cottage cheese, eggs, oats, baking powder, salt, and vanilla extract.
- Blend until smooth.
- Heat a non-stick skillet over medium heat and add a little butter or oil.
- Pour the batter onto the skillet in small rounds.
- Cook until bubbles form on the surface.
- Flip and cook until golden brown.
- Serve warm with your favorite toppings.
Notes
For added sweetness, consider mixing in honey or maple syrup. Fresh fruits make great toppings.
