Ingredients

  • 4 small bell peppers (500 g)
  • 1/3 cup olive oil (80 ml)
  • 5 scallions, diced
  • 1 lb baby spinach, chopped (450 g)
  • 2 cloves garlic, minced
  • 2 tbsp (30 ml) fresh parsley, chopped
  • 2 tbsp (30 ml) fresh dill, chopped
  • salt and pepper to taste
  • 3/4 cup feta cheese, crumbled (75 g)
  • 1/4 cup vegetarian parmesan cheese, grated (25 g)
  • 1 tbsp (15 ml) breadcrumbs
  • 1 egg, lightly beaten


Instructions

  1. Set your oven to a temperature of 350°F.
  2. Cut off the tops of the bell peppers and remove the seeds. Steam both the tops and bottoms of the peppers in a saucepan for approximately 7 minutes, then remove them to drain.
  3. Warm the olive oil in a large pan over medium heat. Add the diced scallions and cook for 2-3 minutes. Introduce the chopped spinach, allowing it to partially wilt. Mix in the minced garlic, chopped parsley, and dill for half a minute, and season with salt and pepper as desired. Take the pan off the heat.
  4. In a sizable mixing bowl, combine the crumbled feta, grated vegetarian parmesan, breadcrumbs, and lightly beaten egg. Incorporate the spinach mixture into the bowl and blend thoroughly.
  5. Fill each pepper with the prepared mixture and arrange them in a small baking dish, replacing the tops. Drizzle with olive oil, cover with foil, and place in the oven to bake for half an hour. Remove the foil and continue baking for an additional 15 minutes, until the peppers are tender enough to pierce with a fork.
