Ingredients

  • 3 large eggplant, peeled and thinly sliced
  • 2 large eggs, beaten
  • 4 cups (950 ml) bread crumbs seasoned with Italian herbs
  • 6 cups (1.4 L) tomato sauce, divided
  • 1 (16 ounce (454 g)) package shredded beef cheese, divided
  • 1/2 cup (120 ml) grated Parmesan cheese, divided
  • 1/2 teaspoon (3 ml) dried basil


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Submerge the eggplant slices in the beaten eggs, then coat them with the seasoned bread crumbs. Arrange them in a single layer on a baking tray.
  3. Bake the eggplant in the oven for 5 minutes, turn them over, and continue baking for another 5 minutes.
  4. On the base of a 9×13-inch baking dish, apply a light layer of tomato sauce; place a layer of eggplant slices over it. Scatter some of the shredded beef cheese and Parmesan cheese over the top.
  5. Continue layering with the rest of the sauce, eggplant, and cheese, finishing with a layer of cheese. Sprinkle dried basil over the top.
  6. Place in the preheated oven and bake until the top is golden brown, approximately 35 minutes.
  7. Serve while hot and enjoy your meal!
