Ingredients
- 1/2 cup (120 ml) white chocolate chips
- 1/4 cup (60 ml) almond butter
- 2 tablespoons (30 ml) vegetable oil
- 3 teaspoons (15 ml) pumpkin pie spice
- 1/2 teaspoon (2.5 ml) vanilla extract
- 4 cups (240 g) Rice Chex
- 3/4 cup (90 g) powdered sugar
- 2 cups (200 g) gluten-free pretzels
- 2 cups (150 g) apple chips, preferably cinnamon flavored
- 2 cups (40 g) mini popcorn cakes, Skinny Pop brand or rice cakes
- 1/2 cup (75 g) roasted salted cashews
- 1/2 cup (75 g) roasted salted almonds
- 1/2 cup (75 g) dried cranberries
- 1/2 cup (90 g) chocolate-coated peanuts
- 1/2 cup (90 g) candy corn
Instructions
- Place the white chocolate chips, almond butter, and vegetable oil into a microwave-safe bowl and heat for half a minute. Stir and continue microwaving in short bursts until fully melted.
- Once the mixture is smooth, mix in the vanilla extract and pumpkin pie spice.
- Transfer the Rice Chex to a sizable bowl and drizzle the melted chocolate and almond butter mixture over them. Use a spatula to gently fold until the Chex are evenly coated.
- Place the powdered sugar into a large resealable plastic bag, add the coated Chex, seal the bag, and shake gently to cover them with sugar.
- Spread the sugar-coated Chex on a baking tray to cool to room temperature.
- After cooling, combine the Chex with the rest of the ingredients in a large bowl. Mix thoroughly and enjoy.
