Ingredients
- 1 package puff pastry sheets
- 2 cups fresh spinach
- 4 large eggs
- 1/2 cup cream
- 1/2 cup grated cheese (e.g., Gruyère or Parmesan)
- Salt and pepper to taste

- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and cut into circles to fit your baking dishes. Place the pastry in the dishes and prick the bottoms with a fork.
- Bake the pastry shells for about 10-12 minutes until golden.
- Heat olive oil in a skillet and sauté the spinach until wilted. Season with salt and pepper.
