Ingredients

  • 1 package puff pastry sheets
  • 2 cups fresh spinach
  • 4 large eggs
  • 1/2 cup cream
  • 1/2 cup grated cheese (e.g., Gruyère or Parmesan)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).

  4. Heat olive oil in a skillet and sauté the spinach until wilted. Season with salt and pepper.
  5. Whisk together the eggs and cream in a bowl, then add the sautéed spinach and cheese.
  6. Pour the mixture into the baked pastry shells.
  7. Bake for an additional 15-20 minutes, or until the egg is set.
  8. Let cool slightly before serving, garnish with fresh herbs if desired.

Notes

Experiment with different cheeses or add a pinch of nutmeg to the egg mixture for enhanced flavor.
