Ingredients
- 4 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup milk
- Salt and pepper to taste
- Optional: diced tomatoes, bell peppers, or herbs
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, whisk together the eggs and milk.
- Stir in the chopped spinach, feta cheese, and any additional ingredients you desire.
- Season with salt and pepper.
- Pour the egg mixture evenly into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until the muffins are set and lightly golden on top.
- Let cool slightly before removing from the tin and enjoy!
Notes
