Ingredients
- – 1 pound ground beef (454 g)
- – 2 green onions, end trimmed, finely minced
- – 1 large egg
- – 1/2 lime, zested
- – 1/2 cup (120 ml) breadcrumbs (panko or alternative)
- – 1 tablespoon (15 ml) minced fresh cilantro
- – 1 tablespoon (15 ml) grated ginger
- – 1 tablespoon (15 ml) grated lemongrass
- – 1 tablespoon (15 ml) grated garlic
- – 1 teaspoon (5 ml) kosher salt
- – 1/4 cup (60 ml) sweet chili sauce
Instructions
- Heat the oven to 350 degrees F and coat an 8×8 baking dish with nonstick spray, then set it aside.
- In a large mixing bowl, combine the ground beef, finely chopped green onions, egg, lime zest, breadcrumbs, minced cilantro, grated ginger, lemongrass, garlic, and salt.
- Mix everything together thoroughly using your hands or a large spoon.
- Form the mixture into balls, each about 2 tablespoons in size, and place them in the prepared baking dish.
- Place the dish in the oven and cook for 10 minutes.
- Take the dish out of the oven and brush the tops of the meatballs with sweet chili sauce.
- Return the dish to the oven and continue baking for an additional 5-10 minutes, or until the meatballs are cooked through and the sauce has become sticky.
- Once they are fully cooked, remove from the oven and serve with extra sweet chili sauce for dipping.
