Ingredients

  • – 1 pound ground beef (454 g)
  • – 2 green onions, end trimmed, finely minced
  • – 1 large egg
  • – 1/2 lime, zested
  • – 1/2 cup (120 ml) breadcrumbs (panko or alternative)
  • – 1 tablespoon (15 ml) minced fresh cilantro
  • – 1 tablespoon (15 ml) grated ginger
  • – 1 tablespoon (15 ml) grated lemongrass
  • – 1 tablespoon (15 ml) grated garlic
  • – 1 teaspoon (5 ml) kosher salt
  • – 1/4 cup (60 ml) sweet chili sauce


Instructions

  1. Heat the oven to 350 degrees F and coat an 8×8 baking dish with nonstick spray, then set it aside.
  2. In a large mixing bowl, combine the ground beef, finely chopped green onions, egg, lime zest, breadcrumbs, minced cilantro, grated ginger, lemongrass, garlic, and salt.
  3. Mix everything together thoroughly using your hands or a large spoon.
  4. Form the mixture into balls, each about 2 tablespoons in size, and place them in the prepared baking dish.
  5. Place the dish in the oven and cook for 10 minutes.
  6. Take the dish out of the oven and brush the tops of the meatballs with sweet chili sauce.
  7. Return the dish to the oven and continue baking for an additional 5-10 minutes, or until the meatballs are cooked through and the sauce has become sticky.
  8. Once they are fully cooked, remove from the oven and serve with extra sweet chili sauce for dipping.
