Description

A simple and comforting taco casserole that combines ground beef, beans, and cheese for a flavorful weeknight dinner.


Ingredients

  • 1 pound (450g) ground beef
  • 1 packet (approx. 1 oz / 28g) taco seasoning
  • 1/2 cup (120ml) water
  • 1 (10-ounce / 280g) can diced tomatoes and green chilies, undrained
  • 1 (15-ounce / 425g) can black beans, rinsed and drained
  • 1 (15-ounce / 425g) can corn, drained
  • 8-10 flour tortillas, cut into bite-sized pieces
  • 2 cups (220g) shredded cheddar cheese
  • Optional toppings like sour cream, salsa, guacamole, and chopped cilantro


Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Brown the ground beef in a large skillet over medium heat and drain off excess grease.
  3. Stir in the taco seasoning and water, then bring to a simmer and cook for about five minutes.
  4. Mix in the can of diced tomatoes and green chilies, followed by black beans and corn.
  5. Spread a thin layer of the beef mixture in a 9×13 inch baking dish.
  6. Layer tortilla pieces over the beef, followed by shredded cheese. Repeat layers until all ingredients are used, ending with cheese on top.
  7. Bake in the preheated oven for 20-25 minutes, or until cheese is bubbly.
  8. Let the casserole sit for a few minutes before serving. Top with your favorite condiments.

Notes

For a lighter version, substitute ground turkey or chicken for the beef. Assemble ahead of time and refrigerate until you’re ready to bake.
