Description
A simple and comforting taco casserole that combines ground beef, beans, and cheese for a flavorful weeknight dinner.
Ingredients
- 1 pound (450g) ground beef
- 1 packet (approx. 1 oz / 28g) taco seasoning
- 1/2 cup (120ml) water
- 1 (10-ounce / 280g) can diced tomatoes and green chilies, undrained
- 1 (15-ounce / 425g) can black beans, rinsed and drained
- 1 (15-ounce / 425g) can corn, drained
- 8-10 flour tortillas, cut into bite-sized pieces
- 2 cups (220g) shredded cheddar cheese
- Optional toppings like sour cream, salsa, guacamole, and chopped cilantro
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Brown the ground beef in a large skillet over medium heat and drain off excess grease.
- Stir in the taco seasoning and water, then bring to a simmer and cook for about five minutes.
- Mix in the can of diced tomatoes and green chilies, followed by black beans and corn.
- Spread a thin layer of the beef mixture in a 9×13 inch baking dish.
- Layer tortilla pieces over the beef, followed by shredded cheese. Repeat layers until all ingredients are used, ending with cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until cheese is bubbly.
- Let the casserole sit for a few minutes before serving. Top with your favorite condiments.
Notes
For a lighter version, substitute ground turkey or chicken for the beef. Assemble ahead of time and refrigerate until you’re ready to bake.
