Ingredients

  • 3 bell peppers (680g)
  • 2 Tbsp vegetable oil (30ml, divided)
  • 1 lb beef sausage (450g)
  • 1 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 1/4 tsp salt (divided)
  • 1/4 tsp black pepper (freshly cracked)
  • 1 cup marinara sauce (240ml)
  • 1/2 cup long grain white rice (uncooked)
  • 3/4 cup chicken broth (180ml)
  • 1 cup shredded mozzarella cheese (125g)


Instructions

  1. Set your oven to 350°F. Clean and dry the bell peppers thoroughly, then slice them in half horizontally, aiming for equal halves. Carefully detach the stem from the top half using a sharp knife. A small hole where the stem was is acceptable.
  2. Position the bell pepper halves in a 9×13-inch baking dish. Coat them with 1 tablespoon of oil, then sprinkle with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Bake the peppers in the warmed oven for 20 minutes until they begin to soften. After baking, take them out and let them cool.
  3. While the peppers are in the oven, start preparing the stuffing. Warm 1 tablespoon of oil in a large pan over medium heat. Cook the beef sausage until it is browned.
  4. Once the sausage is browned, add the chopped onion and minced garlic to the pan. Sauté them over medium heat until the onion becomes clear and the garlic releases its aroma.
  5. Now, incorporate the uncooked rice, marinara sauce, Italian seasoning, garlic powder, 1 teaspoon of salt, and chicken broth into the pan. Mix everything well.
  6. Cover the pan, raise the heat to medium-high, and bring the mixture to a boil. As soon as it boils, reduce the heat to medium-low and let it simmer for 20 minutes without opening the lid or stirring. Afterward, switch off the heat and let it sit, still covered, for another 5 minutes.
  7. Uncover the pan, fluff the rice, and mix everything again to ensure even distribution. Start filling each pepper half with the sausage mixture, packing them fully.
  8. Sprinkle shredded mozzarella cheese evenly over each stuffed pepper. Place a loosely tented piece of aluminum foil over the baking dish and bake for 15 minutes. After this time, the peppers should be tender but not overly soft.
  9. Take off the foil and switch the oven to broil. Broil the peppers for 2-3 minutes until the cheese is lightly browned on top. Keep a close eye on them to avoid burning the cheese. Optionally, add parsley as a garnish and savor your creation!
