Description

Delightful stuffed bell peppers filled with ground turkey or beef, rice, and cheese, perfect for a family meal.


Ingredients

  • 4 medium bell peppers (red, yellow, or green)
  • 1 lb ground turkey or lean beef
  • 1 cup cooked rice (white or brown)
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: Italian seasoning or herbs of choice


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, sauté the onion and garlic until fragrant.
  4. Add the ground turkey or beef and cook until browned; drain any excess fat.
  5. In a bowl, combine the meat mixture with rice, diced tomatoes, salt, pepper, and additional seasonings if desired.
  6. Stuff each pepper generously with the filling mixture.
  7. Place the peppers upright in the baking dish.
  8. Cover with aluminum foil and bake for about 30 minutes.
  9. Remove the foil, sprinkle cheese on top of each pepper, and bake uncovered for an additional 10 minutes until bubbly.

Notes

Feel free to experiment with additional ingredients such as black beans, corn, or different types of cheese for added flavor.
