Description

A delightful and simple strawberry poke cake that brings people together with its vibrant flavors and moist texture.

Ingredients

  • 1 package white cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs (or 4 egg whites)
  • 1 package strawberry jello
  • 1 cup boiling water
  • 8 oz whipped topping
  • 12 strawberries, cut in half

Instructions

  1. Preheat your oven to 350°F. Prepare a 9 x 13 pan with parchment paper or nonstick spray.
  2. In a mixing bowl, combine the white cake mix, vegetable oil, eggs, and boiling water. Mix until smooth.
  3. Pour the batter into the prepared pan. Bake for 28-30 minutes. Check for doneness using a toothpick.
  4. Allow the cake to cool for at least one hour. Poke holes evenly across the surface with the back of a wooden spoon or a fork.
  5. Dissolve the strawberry jello in one cup of boiling water and let it cool slightly.
  6. Pour the warm strawberry jello over the cake, ensuring it seeps into every poke.
  7. Top the cake with whipped topping, garnishing each piece with half a strawberry.
  8. Cut the cake into 24 smaller pieces for serving.

Notes

For a more intense strawberry flavor, consider using fresh pureed strawberries in addition to jello. Customize the cake with other flavors of jello or frosting for a twist.
