- 4 Roma tomatoes, halved
- 2 medium zucchinis, sliced
- 2 carrots, peeled and halved
- 1 red bell pepper, quartered
- 1 white onion, chopped
- 2 garlic cloves, minced

- 1 teaspoon dried basil
- 1 teaspoon Italian seasoning
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup milk or coconut milk (optional)

Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sautéing until soft.
- Stir in carrots, red pepper, and zucchini, cooking for a few minutes.
- Add halved tomatoes, allowing them to break down slightly.
- Mix in dried herbs, salt, and pepper.
- Cover and let simmer for 20 minutes.
- If desired, stir in milk or coconut milk and cook for an additional 5 minutes.
