Ingredients

  • 4 Roma tomatoes, halved
  • 2 medium zucchinis, sliced
  • 2 carrots, peeled and halved
  • 1 red bell pepper, quartered
  • 1 white onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup milk or coconut milk (optional)
  • Fresh basil for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sautéing until soft.
  3. Stir in carrots, red pepper, and zucchini, cooking for a few minutes.
