Ingredients

  • 3 cups (360g) all-purpose flour, plus more for dusting
  • 1 tablespoon (15ml) sugar
  • 1 teaspoon (5 ml) salt
  • 1 cup (230g) beef suet, cut into 1/2-inch pieces
  • 10 tablespoons (150ml) ice water
  • 4 apples, such as Honeycrisp, Gala or Fuji, peeled
  • 4 tablespoons (60g) beef suet, cut into 1/2-inch pieces
  • 1/4 cup (50g) brown sugar
  • 1 teaspoon (5 ml) ground cinnamon


Instructions

  1. In a large mixing bowl, blend the flour, sugar, and salt. Incorporate the beef suet into the flour mixture using a fork until the suet resembles small pea-sized pieces. Gradually add 10 tablespoons of ice water, mixing until the dough forms. Shape the dough into a flat circle, wrap it in plastic, and chill in the refrigerator for at least an hour.
  2. Set your oven to 375°F and prepare a baking sheet with a layer of parchment paper or aluminum foil. Slice the apples in half and remove the cores using a small knife.
  3. Divide the chilled dough into four equal sections. On a lightly floured surface, roll each section into a square about 7 to 8 inches wide. Position two apple halves together on each square. Fill the center of each apple with 1 tablespoon of beef suet, 1 tablespoon of brown sugar, and 1/4 teaspoon of cinnamon.
  4. Moisten the edges of each square with water. Fold the corners over the apples, pinching the edges to ensure they are sealed.
  5. Arrange the dumplings on the prepared baking sheet and bake until they are golden brown and the apples are soft, approximately 40-50 minutes. Serve while warm.
