Description

A delightful loaf bursting with citrus flavor and a crunchy poppy seed texture, perfect for any meal or snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon poppy seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup plain yogurt
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • Optional: lemon glaze (powdered sugar and lemon juice)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
  3. In another bowl, mix the yogurt, vegetable oil, eggs, lemon juice, and lemon zest until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  7. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the optional lemon glaze, whisk together powdered sugar and lemon juice to desired consistency and drizzle over the cooled bread.

Notes

For an extra zing, consider adding more lemon zest or juice. You can also fold in blueberries or nuts for added texture.
