A comforting and flavorful soup made with tender chicken, orzo pasta, and bright lemon juice, perfect for chilly evenings.
Ingredients
- 1 lb chicken breast
- 1 cup orzo pasta
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- Juice of 1 lemon
- Fresh parsley, for garnish
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Prepare the vegetables: dice the onion, carrots, celery, and mince the garlic.
- Heat olive oil in a large pot over medium heat; add onion, carrots, and celery and sauté until softened for about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a gentle boil.
- Add chicken breasts and cook for about 20 minutes until done; shred the chicken and return to the pot.
- Stir in orzo and cook for approximately 10 minutes until tender.
- Adjust seasoning with salt and pepper, if needed.
- Before serving, drizzle in lemon juice and garnish with fresh parsley.
Notes
For variations, add fresh herbs or extra vegetables. Adjust consistency by adding broth or simmering longer if too thick.
