Ingredients

  • – 4 honey crisp apples, peeled, cored, thinly sliced (about 680 g)
  • – 2 eggs
  • – 1/3 cup (80 ml) sugar
  • – 120 ml milk, warmed
  • – 2 tablespoons (30 ml) vegetable oil, melted
  • – 1 teaspoon (5 ml) pure vanilla, or vanilla bean
  • – 60 g all-purpose flour
  • – 1/4 teaspoon (1 ml) salt
  • – 1 teaspoon (5 ml) baking powder
  • – 1/2 teaspoon (3 ml) cinnamon
  • – sliced almonds


Instructions

  1. Ensure you always use the guard when handling a mandoline to avoid injuries. I recommend my preferred mandoline, linked in the recipe card, set to the thinnest slice setting.
  2. Start by setting your oven to 350°F (177°C) and prepare an 11 by 5 inch loaf pan by lining it with parchment paper.
  3. Proceed to peel and core the apples. Using the mandoline with the guard in place, cut the apples into 1/8 inch slices. If you prefer, a knife can be used instead, but the results may vary.
  4. Set the apple slices aside and prepare the cake mixture.
  5. In a large bowl, combine the eggs and sugar. Use a mixer to beat the mixture until it becomes thick and pale, which should take about 1-2 minutes.
  6. Add the warmed milk, melted vegetable oil, and vanilla to the mixture and stir together.
  7. Incorporate the dry ingredients: flour, salt, baking powder, and, if desired, cinnamon. Mix until everything is well blended, then add in the apple slices, ensuring each slice is covered.
  8. With clean hands, arrange a few apple slices at a time into the loaf pan, layering them evenly until the pan is fully loaded.
  9. Once the apple slices are in place, pour any remaining batter over them and gently shake the pan to settle the contents.
  10. Optionally, sprinkle thinly sliced almonds on top for decoration, or leave it plain if preferred.
  11. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  12. For a lightly golden finish, monitor the cake closely as baking times can vary. Once done, remove from the oven and allow it to cool on a wire rack for at least 30 minutes before slicing.
  13. Avoid cutting the cake while it’s hot to prevent it from falling apart.
  14. Serve with a dusting of powdered sugar, a scoop of ice cream, or a drizzle of caramel. Enjoy your dessert!
