Ingredients

  • 1 tablespoons vegetable oil (15 ml)
  • 1 yellow onion, diced
  • 2 garlic cloves
  • 1 tablespoon (15 ml) fresh ginger, minced
  • 5 large carrots, sliced
  • 2 cups diced celery (280 g)
  • 1 teaspoon (5 ml) ground turmeric
  • 1/2 cup lentils (100 g)
  • 1 lb. boneless skinless chicken breast (450 g)
  • 7 cups (1680 ml) chicken broth (1.6 liters)
  • 9 sprigs of fresh thyme
  • 1 sprig of fresh rosemary
  • salt & pepper to taste
  • 2 cups kale, torn into smaller pieces (140 g)
  • juice of one lemon


Instructions

  1. Warm a large Dutch oven over medium-high heat.
  2. Pour in vegetable oil and add the diced onion. Cook for 2-3 minutes until the onion becomes clear.
  3. Introduce the garlic cloves, minced ginger, sliced carrots, diced celery, and ground turmeric. Stir continuously while cooking for an additional 3 minutes.
  4. Incorporate the lentils and stir to combine, then place the uncooked chicken breast on the vegetable mixture. Pour the chicken broth over everything, adding the fresh thyme, rosemary, and season with salt and pepper.
  5. Cover the pot and bring to a rapid boil, then reduce heat to maintain a gentle simmer for 10-15 minutes until the chicken is fully cooked.
  6. Once the chicken is done, take it out of the pot. Use a fork to shred the chicken, then return it to the pot along with the kale pieces.
  7. Allow the soup to simmer for 5 more minutes. Remove the thyme and rosemary sprigs. Complete the dish by adding the juice of one lemon.

Notes

  • For a vegetarian option, omit the chicken breast and increase lentils for added protein.
  • To save time, use pre-cooked shredded or rotisserie chicken instead of cooking from scratch.
