Ingredients
- 1 tbsp (15 ml) extra-virgin olive oil
- 1/2 cup (120 g) onions, diced
- 1/2 cup (75 g) carrots, diced
- 3 cloves garlic, minced
- 2 cups (450 g) ground beef
- 1/2 cup (120 ml) homemade tomato sauce
- 1 cup (130 g) green beans, diced
- Salt and fresh ground black pepper
- 2 big bell peppers, cut in half
- Grated cheese
- Fresh parsley for garnishing
Instructions
- Set your oven to 350°F to preheat.
- Warm the olive oil in a pan over medium-high warmth.
- Introduce the onions, carrots, and garlic into the pan. Stir them until the onions turn clear and the carrots become soft.
- Incorporate the ground beef and stir until it loses its pink hue, ensuring you crumble the meat with a wooden spoon as it cooks.
- Mix in the homemade tomato sauce, green beans, along with some salt and pepper. Let them cook together for an additional 3-5 minutes.
- Place the halved bell peppers in a greased baking dish with the open side facing upwards.
- Stuff each pepper half with the beef and green bean mixture.
- Put the dish in the oven and bake for roughly 30 minutes, or until the peppers are tender.
- After baking, take them out and top with grated cheese and fresh parsley.
