Ingredients

  • 1 tbsp (15 ml) extra-virgin olive oil
  • 1/2 cup (120 g) onions, diced
  • 1/2 cup (75 g) carrots, diced
  • 3 cloves garlic, minced
  • 2 cups (450 g) ground beef
  • 1/2 cup (120 ml) homemade tomato sauce
  • 1 cup (130 g) green beans, diced
  • Salt and fresh ground black pepper
  • 2 big bell peppers, cut in half
  • Grated cheese
  • Fresh parsley for garnishing


Instructions

  1. Set your oven to 350°F to preheat.
  2. Warm the olive oil in a pan over medium-high warmth.
  3. Introduce the onions, carrots, and garlic into the pan. Stir them until the onions turn clear and the carrots become soft.
  4. Incorporate the ground beef and stir until it loses its pink hue, ensuring you crumble the meat with a wooden spoon as it cooks.
  5. Mix in the homemade tomato sauce, green beans, along with some salt and pepper. Let them cook together for an additional 3-5 minutes.
  6. Place the halved bell peppers in a greased baking dish with the open side facing upwards.
  7. Stuff each pepper half with the beef and green bean mixture.
  8. Put the dish in the oven and bake for roughly 30 minutes, or until the peppers are tender.
  9. After baking, take them out and top with grated cheese and fresh parsley.
