Ingredients
- 1 lb (454 g) ground beef
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1/2 cup (120 ml) green bell pepper
- 1/2 cup (120 ml) red bell pepper
- 5 oz (411 g) diced tomatoes
- 3/4 cups (180 ml) white rice, I use Jasmine
- 2 cups (480 ml) beef broth
- 2 tbsp (30 ml) tomato paste
- 1 tsp (5 ml) Italian seasoning
- 1/2 tsp (2.5 ml) salt
- 1/4 tsp (1.25 ml) black pepper
- 1 1/2 cups (170 g) shredded cheese
- 1 tbsp (15 ml) parsley
Instructions
- Cook the minced beef along with the chopped onion and minced garlic in a frying pan over medium heat until the beef is thoroughly cooked, broken up into pieces, and no longer pink. Remove excess fat and discard it. Return the pan to the stove and incorporate the chopped bell peppers, diced tomatoes, rice, beef broth, tomato paste, Italian herbs, salt, and black pepper. Mix everything together and bring the mixture to a rolling boil.
- Lower the heat to a gentle simmer, cover the pan, and allow it to cook for approximately 18 minutes, until the rice is completely done.
- Use a fork to fluff the rice, then sprinkle the shredded cheese on top. Cover once more and let the cheese melt over low heat. Add fresh parsley as a finishing touch and savor the dish!
