Ingredients
- 2 eggs
- ½ cup honey
- 2 carrots, shredded
- 1 cup oats
- ½ teaspoon baking soda
- 1 tablespoon cinnamon
- ¼ cup butter, at room temperature
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 180°C/300°F.
- Place all ingredients, except for the shredded carrots, into a bowl. Blend them using an immersion blender until smooth.
- Stir in the shredded carrots until evenly distributed throughout the mixture.
- Line your baking pan with parchment paper. Spread the mixture evenly in the pan.
- Bake in the oven for 20-30 minutes. Check doneness by inserting a toothpick in the center; it should come out clean.
