Description

A delightful and nutritious dessert that combines oats and shredded carrots, perfect for any occasion.


Ingredients

  • 2 eggs
  • ½ cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • ½ teaspoon baking soda
  • 1 tablespoon cinnamon
  • ¼ cup butter, at room temperature
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 180°C/300°F.
  2. Place all ingredients, except for the shredded carrots, into a bowl. Blend them using an immersion blender until smooth.
  3. Stir in the shredded carrots until evenly distributed throughout the mixture.
  4. Line your baking pan with parchment paper. Spread the mixture evenly in the pan.
  5. Bake in the oven for 20-30 minutes. Check doneness by inserting a toothpick in the center; it should come out clean.
