Ingredients

  • – 4 cups (960 ml) beef stock (about 1 liter, organic or homemade preferred)
  • – 1/2 teaspoon (3 ml) vegetable oil
  • – 3/4 teaspoon (4 ml) salt
  • – 1/8 teaspoon (1 ml) sugar
  • – 1/8 teaspoon (1 ml) white pepper
  • – 1/2 teaspoon (3 ml) turmeric (Or 5 drops yellow food coloring. Optional, but if you want “the look…”)
  • – 3 tablespoons cornstarch (mixed with 80 ml water)
  • – 3 eggs (lightly beaten)
  • – 1 scallion (chopped)
  • – 1/4 teaspoon (1 ml) umami seasoning (increase amount to personal preference)

Instructions

  1. Heat the beef stock in a medium-sized pot until it begins to gently bubble.
  2. Incorporate the vegetable oil, salt, sugar, white pepper, and umami seasoning.
  3. Add the turmeric or a few drops of yellow food coloring for a vibrant hue, although this is optional.
  4. Taste the mixture and adjust the flavors to your preference if necessary.
  5. Next, blend the cornstarch with water thoroughly before adding it.
  6. Gradually pour in the cornstarch mixture while stirring constantly to avoid any lumps from forming.
  7. Adjust the starch amount based on your desired thickness, and let it simmer for a few minutes to reach your preferred consistency.
  8. Now for the highlight: the eggs.
  9. Lightly beat the eggs to create a mixture that will form both white and yellow strands.
  10. To achieve either large or small egg swirls, control the stirring speed.
  11. Gently swirl the soup with a ladle and slowly add the egg mixture until fully incorporated.
  12. Serve the soup into individual bowls, garnish with chopped scallions, and enjoy!

Notes

  • Consider using bone broth for a richer flavor instead of regular beef stock.
  • Experiment with various umami seasonings to discover your preferred combination.
  • Try pouring the egg strands in a circular motion for a visually appealing presentation.
