Ingredients
- 240 grams (2 cups) all-purpose flour
- 14 grams (1 tablespoon) baking powder
- 1 ¼ teaspoons kosher salt
- 113 grams (½ cup, 1 stick) unsalted butter, very cold and cut into small pieces

- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the pieces of cold butter and cut into the dry ingredients with a pastry cutter or fork until the mixture resembles coarse meal.
- If desired, stir in any cheeses or other add-ins at this stage.
- Pour in the smaller amount of milk or buttermilk and stir until just combined, adding more milk if the mixture appears dry.
- Drop large mounds (about ¼ cup each) onto a parchment-lined baking sheet.
- Bake for 16-20 minutes or until golden brown.
- If desired, brush the biscuits with melted butter and sprinkle with flaky salt.
Notes
For best results, keep the butter cold and avoid over-mixing the dough to maintain flakiness.
