Description

A simple yet delightful recipe for drop biscuits that brings warmth and comfort to any meal.


Ingredients

  • 240 grams (2 cups) all-purpose flour
  • 14 grams (1 tablespoon) baking powder
  • 1 ¼ teaspoons kosher salt
  • 113 grams (½ cup, 1 stick) unsalted butter, very cold and cut into small pieces
  • 170-227 grams (¾-1 cup) milk or buttermilk


Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Add the pieces of cold butter and cut into the dry ingredients with a pastry cutter or fork until the mixture resembles coarse meal.
  4. If desired, stir in any cheeses or other add-ins at this stage.
  5. Pour in the smaller amount of milk or buttermilk and stir until just combined, adding more milk if the mixture appears dry.
  6. Drop large mounds (about ¼ cup each) onto a parchment-lined baking sheet.
  7. Bake for 16-20 minutes or until golden brown.
  8. If desired, brush the biscuits with melted butter and sprinkle with flaky salt.

Notes

For best results, keep the butter cold and avoid over-mixing the dough to maintain flakiness.
