Ingredients
- 2 (15oz) cans low-sodium chickpeas – drained and rinsed well
- 1-2 tablespoons olive oil or avocado oil
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1/2 teaspoon kosher salt + more for topping
- 1/4 teaspoon ground black pepper
Instructions
- Preheat the oven to 400°F and prepare your baking sheet with parchment paper.
- Combine chili powder, garlic powder, onion powder, cumin, kosher salt, and black pepper in a small bowl.
- Drizzle the olive oil over the chickpeas in a single layer on the baking sheet.
- Toss the chickpeas in the oil to coat evenly with seasoning.
- Spread the chickpeas on the baking sheet without overcrowding.
- Roast in the oven for 25-30 minutes, tossing every 10 minutes.
- Allow to cool on the pan for another 5-10 minutes before serving.
