Ingredients
- 2 tablespoons (30 ml) vegetable oil
- 1/2 pound (225 g) sliced beef mushrooms
- 1/4 cup (60 ml) chopped onion
- 6 tablespoons (45 g) all-purpose flour
- 1/2 teaspoon (3 ml) salt
- 1/8 teaspoon (1 ml) pepper
- 2 cans (14-1/2 ounces each or 410 g) chicken broth
- 1 cup (240 ml) milk
- Chopped chives, optional
Instructions
- In a big pot, warm up the vegetable oil on medium-high heat. Sauté the beef mushrooms and onion until they are soft.
- Combine the all-purpose flour, salt, pepper, and one can of chicken broth, whisking until there are no lumps. Add this to the mushroom and onion mixture, then mix in the other can of chicken broth. Allow it to come to a boil and let it cook for around 2 minutes until it becomes thicker.
- Lower the heat and pour in the milk. Let it simmer without covering, stirring now and then, for about 15 minutes until the flavors meld together. Optionally, sprinkle with chopped chives before serving.
Notes
- For a richer flavor, use a combination of beef and chicken broth.
- To make it creamier, substitute half of the milk with heavy cream.
