A delightful chicken stir fry featuring tender chicken, crisp vegetables, and flavorful sauces, perfect for busy weeknights.
Ingredients
- 1 lb chicken tenders
- 1 head broccoli
- 2 bell peppers (any color)
- 1 yellow onion
- 1/4 cup + 2 tbsp soy sauce
- 3 tbsp olive oil
- 2 1/2 tbsp honey
- 1 1/2 tsp garlic powder
- 1/2 tsp ground ginger
- Pepper and salt to taste
Instructions
- Chop broccoli into bite-sized chunks and slice the peppers and onion into thin strips.
- Cut chicken tenders into strips.
- Add 1 tablespoon of olive oil to a pan and place it over medium heat.
- Add the chicken, season with salt and pepper, and cook until browned and cooked through. Remove from the heat.
- In the same pan, add 2 tablespoons of olive oil.
- Add broccoli, bell peppers, onion, garlic powder, ground ginger, and pepper. Sauté for about 10 minutes until softened.
- Lower the heat and add soy sauce and honey, simmering for a few minutes.
- Return the cooked chicken to the pan, mix together, and let simmer for another 5 minutes.
- Serve over rice and enjoy!
Notes
For a variation, consider adding snap peas, carrots, or mushrooms for extra flavor and texture.
