Instructions
- Start by prepping all ingredients. Chop the onions, carrots, and potatoes into uniform pieces.
- Place the chopped vegetables into the bottom of the crockpot.
- Season the chicken breasts or thighs with salt, pepper, thyme, and paprika.
- Lay the seasoned chicken on top of the vegetables.
- Add minced garlic and pour the chicken broth over all the ingredients.
- Cover the crockpot and cook on low for 6-8 hours or high for 4-5 hours.
- Once done, ensure the chicken reaches an internal temperature of 165°F.
