Description

Ingredients

  • 2 pounds of chicken breast or thighs (skinless)
  • 1 cup of chopped onions
  • 2 cups of diced carrots
  • 2 cups of chopped potatoes
  • 3 cloves of minced garlic
  • 1 teaspoon of dried thyme
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 1 cup of chicken broth (low sodium)


Instructions

  1. Start by prepping all ingredients. Chop the onions, carrots, and potatoes into uniform pieces.
  2. Place the chopped vegetables into the bottom of the crockpot.
  3. Season the chicken breasts or thighs with salt, pepper, thyme, and paprika.
  4. Lay the seasoned chicken on top of the vegetables.
  5. Add minced garlic and pour the chicken broth over all the ingredients.
  6. Cover the crockpot and cook on low for 6-8 hours or high for 4-5 hours.
  7. Once done, ensure the chicken reaches an internal temperature of 165°F.
