Description

Ingredients

  • 12 oz lean ground beef or turkey (340 g)
  • 1.5 cups diced red or green bell pepper (360 ml)
  • 1 package taco seasoning (35 g)
  • 8 (7 inch) flour or corn tortillas
  • 2 cups shredded Mexican cheese
  • 1.5 cups salsa or picante sauce (360 ml)
  • 1 cup shredded lettuce (240 ml)
  • 1 cup chopped tomato (240 ml)
  • 0.5 cup plain yogurt (120 ml)


Instructions

  1. Warm a large skillet over medium-high heat and add the meat and bell pepper. Stir for about 5 minutes until the meat is broken up and no longer pink, then drain any excess liquid.
  2. Incorporate the taco seasoning mix and 1/2 cup of water into the skillet. Let it cook without a cover for 5 minutes, stirring now and then until the sauce thickens.
  3. Place 1/3 cup of the meat mixture along the center of each tortilla, then add 2 tablespoons of cheese on top. Roll them up and arrange them seam-side down in a greased 13×9-inch baking dish. Pour salsa over the enchiladas.
  4. Cover the dish with foil and bake in an oven preheated to 375 degrees F for 18 minutes or until thoroughly heated.
  5. Remove the foil and sprinkle the remaining cheese on top. Bake for an additional 2 minutes or until the cheese is melted.
  6. Serve accompanied by lettuce, tomato, and, if desired, plain yogurt.
