Ingredients
- 3 cups broth (chicken or vegetable)
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 2 cups broccoli florets, chopped
- 1 cup white rice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 cups cheddar cheese, shredded
- Splash of half and half (optional)
- Additional salt and pepper to taste
Instructions
- Bring the broth, olive oil, garlic powder, onion powder, and salt to a boil in a medium saucepan with a lid.
- Stir in the white rice and broccoli, returning to a boil.
- Cover with the lid and turn the heat down to low.
- Let it simmer for 20 minutes until the rice is cooked through and the broccoli is tender.
- Mix in the cheddar cheese until melted, adding half and half if desired for creaminess.
- Taste and adjust salt and pepper as needed.
