Ingredients
- 6 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup cooked sausage, crumbled (or diced ham, bacon, or vegetables)
- 8 small flour or corn tortillas
- Salt and pepper to taste
- Cooking oil or spray
Instructions
- In a skillet, scramble the eggs over medium heat. Season with salt and pepper.
- Add the cooked sausage and cheese, stirring until the cheese is melted.
- Warm tortillas in a dry pan until pliable.
- Spoon a portion of the egg mixture onto each tortilla and roll.
- Place on a greased baking sheet seam-side down.
- Bake at 375°F (190°C) for 15-20 minutes until golden and crispy.
