Description

Quick and delicious breakfast taquitos filled with scrambled eggs, sausage, and cheese, perfect for busy mornings.


Ingredients

  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked sausage, crumbled (or diced ham, bacon, or vegetables)
  • 8 small flour or corn tortillas
  • Salt and pepper to taste
  • Cooking oil or spray


Instructions

  1. In a skillet, scramble the eggs over medium heat. Season with salt and pepper.
  2. Add the cooked sausage and cheese, stirring until the cheese is melted.
  3. Warm tortillas in a dry pan until pliable.
  4. Spoon a portion of the egg mixture onto each tortilla and roll.
