Description

A comforting bowl of dumpling potsticker soup with tender dumplings, vibrant veggies, and a warm, fragrant broth.


Ingredients

  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili garlic sauce (optional)
  • 1 cup mushrooms, sliced
  • 2 cups bok choy or spinach, chopped
  • 12 frozen dumplings (vegetable or chicken)
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds
  • Black pepper, to taste
  • Red pepper flakes, to taste


Instructions

  1. Heat sesame oil in a pot over medium heat.
  2. Add minced garlic and ginger, sauté for 1-2 minutes until fragrant.
  3. Pour in vegetable broth, soy sauce, rice vinegar, and optional chili garlic sauce; bring to a gentle boil.
  4. Add sliced mushrooms and let them simmer until tender.
  5. Add bok choy or spinach and simmer briefly until wilted.
  6. Gently add frozen dumplings and simmer until cooked through.
  7. Garnish with chopped green onions and toasted sesame seeds before serving.

Notes

For a heartier meal, you can add noodles instead of dumplings. Adjust the seasoning according to your taste preferences.
