Ingredients

  • 1 large apple, peeled and cored (such as Granny Smith or Honeycrisp)
  • 1 1/2 cups all-purpose flour (180g)
  • 1/2 cup granulated sugar plus more for sprinkling (100g)
  • 1/2 cup packed light brown sugar (110g)
  • 3/4 teaspoon (4 ml) ground cinnamon
  • 1/2 teaspoon (3 ml) baking soda
  • 1/4 teaspoon (1 ml) baking powder
  • 1/4 teaspoon (1 ml) salt
  • 1/4 teaspoon (1 ml) grated nutmeg
  • 2 large eggs, beaten
  • 1/2 cup vegetable oil (120ml)
  • 1/2 cup chopped almonds or pecans, optional (60g)


Instructions

  1. Warm up your oven to 350°F. Coat an 8×4-inch loaf pan with grease and line it with parchment paper, leaving some extra paper hanging over the sides.
  2. Use the largest setting on a cheese grater to shred the apple, or chop it into small bits. Put it aside for now.
  3. In a medium-sized bowl, mix together the flour, both sugars, cinnamon, baking soda, baking powder, salt, and nutmeg. Blend in the eggs and oil until everything is well mixed. The batter will be thick.
  4. Fold the apple and nuts (if you’re including them) into the batter until they are well distributed. Pour the mixture into the prepared loaf pan and even out the top. Add a sprinkle of extra granulated sugar if you like.
  5. Place in the oven and bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan on a wire rack for 10 minutes. Take it out of the pan and allow it to cool for another 30 minutes. Cut into slices and enjoy while warm. Store any remaining bread in a tightly wrapped container in the refrigerator for up to 5 days.
