  • 2 cups (480 ml) shredded cooked beef
  • 1 large yellow onion, finely diced
  • 4 stalks celery, finely diced
  • 1 cup (240 ml) baby carrots
  • 2 red bell peppers, chopped
  • 1 can of sliced sweet potatoes
  • 1 can diced roasted tomatoes
  • 1/4 cup (60 ml) chopped fresh parsley
  • 1 tbsp (15 ml) minced garlic
  • 1 tbsp (15 ml) salt
  • 1 tsp (5 ml) ground black pepper
  • 8 oz (225 g) pasta


Instructions

  1. Place the beef, vegetables, canned tomatoes, approximately 8 cups of water, fresh parsley, minced garlic, salt, and ground black pepper into a slow cooker.
  2. Secure the lid and let it cook on LOW for 4 hours.
  3. Cook the pasta by following the directions on the package.
  4. Combine the cooked pasta with the contents of the slow cooker and mix well.
