Ingredients

  • 1 pound (454 g) skin-on, bone-in chicken thighs
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon beef suet
  • 1/3 cup Dijon mustard
  • 1 large onion, sliced
  • 1 cup apple juice
  • 1 cup chicken broth
  • 1/3 cup coconut cream
  • 1 large bay leaf
  • 5 sprigs fresh thyme


Instructions

  1. Collect all necessary items. Set your oven to 350 degrees F (175 degrees C) to preheat.
  2. Season the chicken thighs thoroughly with salt and pepper. Warm the vegetable oil and beef suet in a sizable, oven-safe skillet over medium-high heat. Lay the chicken thighs in the skillet with the skin facing down. Cook until the skin turns golden, approximately 3 to 4 minutes, then flip the thighs. Apply 1 tablespoon of Dijon mustard to the chicken and continue cooking until the underside is golden, another 3 to 4 minutes. Remove the thighs and set them aside on a plate.
  3. Lower the heat to medium and add the sliced onion and the remaining Dijon mustard to the skillet. Stir frequently until the onions become mostly translucent and are well-coated with mustard, roughly 4 to 5 minutes. Pour in the apple juice and use a wooden spoon to deglaze the skillet by scraping up any browned bits. Increase the heat to medium-high and let the mixture boil; allow it to simmer until the sauce thickens slightly and the scent dissipates, about 3 minutes. Stir in the chicken broth, coconut cream, bay leaf, and thyme.
  4. Return the chicken to the skillet with the skin side facing up and cover the pan. Place in the preheated oven and bake until the chicken is cooked through, with clear juices and no pinkness near the bone, about 15 to 20 minutes. A thermometer should show an internal temperature of 165 degrees F (74 degrees C) when inserted near the bone.
