Ingredients
- 3-4 pounds beef roast (chuck or brisket)
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2-3 carrots, sliced (optional)
- 2-3 potatoes, cubed (optional)
Instructions
- Season the beef roast with salt and pepper.
- Place the sliced onion, minced garlic, carrots, and potatoes in the bottom of the slow cooker.
- Add the beef roast on top of the vegetables.
- Mix the beef broth, Worcestershire sauce, thyme, and rosemary together in a bowl, then pour it over the roast.
- Cover and cook on low for 480-600 minutes or high for 240-360 minutes until the roast is tender.
- Remove the roast from the slow cooker, let it rest for a few minutes, then slice and serve with the vegetables and juices from the cooker.
