Description

A heartwarming and comforting slow cooker roast beef recipe that’s perfect for family gatherings.


Ingredients

  • 3-4 pounds beef roast (chuck or brisket)
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2-3 carrots, sliced (optional)
  • 2-3 potatoes, cubed (optional)


Instructions

  1. Season the beef roast with salt and pepper.
  2. Place the sliced onion, minced garlic, carrots, and potatoes in the bottom of the slow cooker.
  3. Add the beef roast on top of the vegetables.
  4. Mix the beef broth, Worcestershire sauce, thyme, and rosemary together in a bowl, then pour it over the roast.
  5. Cover and cook on low for 480-600 minutes or high for 240-360 minutes until the roast is tender.
  6. Remove the roast from the slow cooker, let it rest for a few minutes, then slice and serve with the vegetables and juices from the cooker.
