A warm bowl of garlic chickpea soup that combines the simplicity of chickpeas with vibrant spices for a comforting dish.
Ingredients
- 2 cans chickpeas, drained and rinsed
- 4 cups vegetable broth
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, diced
- 1 celery stalk, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Add the minced garlic, cumin, and paprika, and cook for another minute until fragrant.
- Stir in the chickpeas and vegetable broth. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes.
- Use a blender or immersion blender to puree the soup to your desired consistency.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley.
Notes
For a creamier texture, consider adding a splash of coconut milk during blending.
