Description

A warm bowl of garlic chickpea soup that combines the simplicity of chickpeas with vibrant spices for a comforting dish.


Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  3. Add the minced garlic, cumin, and paprika, and cook for another minute until fragrant.
  4. Stir in the chickpeas and vegetable broth. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes.
  5. Use a blender or immersion blender to puree the soup to your desired consistency.
  6. Season with salt and pepper to taste.
