Ingredients
- 1 cup cooked quinoa
- 1 cup grated zucchini (squeeze out excess water)
- 1 cup grated carrot (or sweet potato)
- 1 can canned chickpeas (lightly mashed)
- 1 cup bell pepper (any color)
- 2 pieces green onions (finely chopped)
- 1 cup breadcrumbs (or gluten-free varieties)
- 1 large egg (or flax egg)
- 2 tbsp soy sauce (or tamari)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil (or cooking spray)
Instructions
- Preheat your skillet over medium heat and add olive oil.
- In a large mixing bowl, combine the cooked quinoa, grated zucchini, grated carrot, mashed chickpeas, chopped bell pepper, and green onions.
- Add the breadcrumbs, egg (or flax egg), soy sauce, garlic powder, onion powder, cumin, smoked paprika, and a sprinkle of salt and pepper. Mix thoroughly.
- Form the mixture into patties of your preferred size.
- Cook the patties in the skillet for 4-5 minutes on each side until golden brown.
- Transfer cooked patties to a paper towel to absorb excess oil.
- Serve hot or warm, garnished with sauces or fresh herbs as desired.
Notes
For a crispy texture, ensure the patties are cooked evenly and not overcrowded in the skillet. You can customize the spices and vegetables to your liking.
