Description

Delicious and nutritious quinoa veggie patties packed with colorful ingredients, perfect for gatherings or quick weeknight meals.


Ingredients

  • 1 cup cooked quinoa
  • 1 cup grated zucchini (squeeze out excess water)
  • 1 cup grated carrot (or sweet potato)
  • 1 can canned chickpeas (lightly mashed)
  • 1 cup bell pepper (any color)
  • 2 pieces green onions (finely chopped)
  • 1 cup breadcrumbs (or gluten-free varieties)
  • 1 large egg (or flax egg)
  • 2 tbsp soy sauce (or tamari)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (or cooking spray)


Instructions

  1. Preheat your skillet over medium heat and add olive oil.
  2. In a large mixing bowl, combine the cooked quinoa, grated zucchini, grated carrot, mashed chickpeas, chopped bell pepper, and green onions.
  3. Add the breadcrumbs, egg (or flax egg), soy sauce, garlic powder, onion powder, cumin, smoked paprika, and a sprinkle of salt and pepper. Mix thoroughly.
  4. Form the mixture into patties of your preferred size.
  5. Cook the patties in the skillet for 4-5 minutes on each side until golden brown.
  6. Transfer cooked patties to a paper towel to absorb excess oil.
  7. Serve hot or warm, garnished with sauces or fresh herbs as desired.

Notes

For a crispy texture, ensure the patties are cooked evenly and not overcrowded in the skillet. You can customize the spices and vegetables to your liking.
