Ingredients
- 1 liter (1000 ml) beef stock preferably made with the bones, skin from a roast beef or use low salt stock cubes
- 2 medium onions roughly chopped
- 1 medium parsnip finely chopped
- 2 sticks celery finely chopped
- 4 cloves garlic finely chopped
- 500g potatoes, peeled (1.1 lbs) 100g finely chopped, 400g in bite sized chunks
- 400g carrots (0.88 lbs) 100g finely chopped, 300g in bite sized chunks
- 1 large leek cut in half from top to bottom. Half finely chopped, half roughly chopped
- salt & pepper
- 300-400g leftover beef roast, skin & bones removed chopped into bite sized pieces
- 120g frozen peas (4.23 oz)
- 2 tbsp (30 ml) chopped parsley optional
Instructions
- Grab a large pot and pour in the broth, along with the onions, parsnip, celery, and garlic. Add the finely diced potatoes, carrots, and leek. Sprinkle in a little salt and a generous amount of pepper, cover the pot, and bring it to a gentle boil.
- Allow it to gently boil until the finely chopped veggies become very soft (around 15-20 minutes). Remove from heat and use an immersion blender to blend the vegetables until they are almost fully pureed into the broth. Taste and adjust the seasoning if needed.
- Introduce the carrot chunks and let them cook for 5 minutes. Mix in the potato chunks and the coarsely chopped leek. Continue to simmer until the carrot and potato are just soft (about 15-20 minutes), stirring occasionally to prevent sticking.
- Add in the beef pieces, frozen peas, and half of the parsley if desired. Let it simmer gently until the beef and peas are warmed through (5-10 minutes), stirring occasionally.
- Taste and adjust the seasoning if necessary. Right before serving, stir in the remaining parsley if you wish.

- Finely chop the vegetables to achieve a smoother texture in the stew.
