A light and airy dessert that captures the essence of summer with fresh strawberries, whipped cream, and a hint of lemon.
Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 packet unflavored gelatin
- 2 tablespoons cold water
Instructions
- In a blender, puree the strawberries with sugar and lemon juice until smooth.
- In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes.
- Heat the gelatin mixture in the microwave for about 10-15 seconds until dissolved, then stir it into the strawberry puree.
- In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the strawberry mixture until well combined.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
Notes
Use chilled tools for whipping cream for a fluffier texture. Consider adding mint or basil for an exciting twist.
