Ingredients

  • 3/8 cup water (90 ml)
  • 6 apples – peeled, cored, and chopped
  • 3/4 cup cane sugar (150 g)
  • 2 tablespoons all-purpose flour (15 g)
  • 1 teaspoon (5 ml) ground mulling spices
  • 1 pinch salt
  • 1/2 cup beef fat, softened (113 g)
  • 1/2 cup cane sugar (100 g)
  • 3/4 cup all-purpose flour (90 g)
  • 3/4 cup rolled oats (75 g)
  • 1 teaspoon (5 ml) ground cinnamon
  • 1 pinch salt


Instructions

  1. Combine the flour and salt in a large mixing bowl. Work the egg yolks and chilled beef fat into the flour until the mixture resembles fine crumbs. Gradually incorporate the water, adding just enough until the dough begins to come together. Wrap the dough in plastic wrap and chill in the refrigerator for approximately 30 minutes.
  2. On a floured surface, roll out the dough and fit it into a 9-inch deep-dish pie pan.
  3. Set your oven to heat at 350 degrees F (175 degrees C).
  4. In a large bowl, thoroughly mix the apples, sugar, flour, mulling spices, and a pinch of salt. Transfer the apple mixture into the pie crust you’ve prepared.
  5. With an electric mixer, blend the softened beef fat and sugar in a separate bowl until creamy. Add the flour, oats, cinnamon, and a pinch of salt, stirring until combined. Evenly distribute this crumb topping over the apple filling.
  6. Place the pie in the preheated oven and bake until the crust and topping achieve a golden hue and the filling begins to bubble, which should take about an hour.
