Ingredients
- 1.5 lbs chicken breast, diced
- 1 can (14 oz) coconut milk
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup bell peppers, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a crockpot, combine the chicken, coconut milk, chicken broth, carrots, bell peppers, onion, garlic, ginger, red curry paste, and fish sauce.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked and tender.
- Before serving, stir in the lime juice.
- Serve hot, garnished with fresh cilantro and lime wedges.
