Description

A comforting and easy-to-make soup featuring tender chicken in a creamy coconut base with vibrant flavors from Thai cuisine.


Ingredients

  • 1.5 lbs chicken breast, diced
  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish
  • Lime wedges for serving


Instructions

  1. In a crockpot, combine the chicken, coconut milk, chicken broth, carrots, bell peppers, onion, garlic, ginger, red curry paste, and fish sauce.
  2. Stir well to combine all ingredients.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked and tender.
  4. Before serving, stir in the lime juice.
  5. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

For an enhanced flavor, consider searing the chicken before adding it to the crockpot. Adjust the consistency by adding more broth for a thinner soup or cooking uncovered for a thicker texture.
