Description
Tender beef chuck roast slow-cooked with spices and served in crusty hoagie rolls with provolone cheese and savory au jus.
Ingredients
- 2 lbs beef chuck roast
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Hoagie rolls
- Sliced provolone cheese
Instructions
- Place the sliced onion and garlic at the bottom of the slow cooker.
- Rub the beef chuck roast with salt and pepper and place it on top of the onions.
- In a bowl, mix together the beef broth, water, Worcestershire sauce, and dried thyme. Pour this mixture over the beef.
- Cover and cook on low for 480 minutes or until the beef is tender.
- Once cooked, remove the beef and shred it with two forks.
- Return the shredded beef to the slow cooker and stir it into the juices.
- Toast hoagie rolls, place the shredded beef inside, top with provolone cheese, and serve with the au jus for dipping.
Notes
For added flavor, consider searing the beef before slow cooking. Serve with sides like coleslaw or seasoned fries.
